Baked Sweet Potato with Black Bean Salsa
Ingredients:
* 4 medium sweet potatoes
* 1 can (15 oz) black beans, drained and rinsed
* 1 cup corn (fresh, canned, or frozen)
* 1 red bell pepper, diced
* 1/4 cup red onion, diced
* 1/4 cup cilantro, chopped
* Juice of 1 lime
* 1 teaspoon cumin
* Salt and pepper to taste
* Greek yogurt or avocado for topping (optional)
Instructions:
1, Preheat the oven to 400 F (200 C). Pierce sweet potatoes with a fork and place them on a baking sheet. Bake for 45-60 minutes until tender.
2. In a bowl, mix black beans, corn, red bell pepper, red onion, cilantro, lime juice, cumin, salt, and pepper.
3. Once sweet potatoes are cooked, slice them open and top with the black bean salsa. Add Greek yogurt or avocado if desired. Serve warm.
